2021 Foradori Nosiola Fontanasanta
100% Nosiola. An ancient local variety, Nosiola has made a small comeback from near-extinction, thanks in large part to Foradori, who farms 2 hectares of it on clay-limestone soils in the Fontanasanta hills above Trento. Destemmed but not pressed: whole berries ferment spontaneously and age in clay amphorae for 8 months. The wine is then finished in oak and acacia casks for 2 months prior to bottling.
