Xavier Weisskopf founded Le Rocher des Violettes in 2005 after studying winemaking in Chablis and Beaune and earning his degree in viticulture and oenology. This is a 100% Chenin Blanc from an organic vineyard, the 1st plot to get harvested. Bone-dry, delicate pitted fruits enhanced by a chalky minerality, adding a joyous lift.
